Mother’s Day is a big deal…HUGE! And moms need to be celebrate with style. What better way to honor your mom on her day than with Champagne; and what better Champagne than one with a long history of strong and determined women: Laurent-Perrier!

This Mother’s Day toast mom with a Champagne forged by the character, tenacity, dedication, and hard work of four determined women!

Laurent – Perrier NV Brut Champagne: The wine was crafted of 50% Chardonnay, 35% Pinot Noir and 15% Pinot Meunier. It poured a soft gold in the glass with elegant and fine perlage; aromas are reminiscent of lemon meringue pie with creamy lemon curd and toasted graham cracker, add some orchard fruit notes, spice and a touch of honey ~ yum; fresh and lively on the palate with persistent bubbles, crisp acidity with an elegant mouth feel; I did not want the bottle to end! After blending the Brut was aged for a minimum of three years. A light dosage of 10 grams of sugar per liter was added to the Brut NV after disgorging.

Although this Champagne would make an excellent aperitif I think Mom would also love to enjoy it with a delicious meal. I chose to pair it with a light and healthy spring dish, perfect for Mom because it is delicious and perfect for the family because it is easy. I found Lemon Roasted Salmon with White Wine Couscous and Broccoli in the May edition of Cooking Light Magazine and knew it was a perfect Mother’s Day meal. Furthermore, the Laurent – Perrier Brut NV Champagne was not a truly delicious pairing but made this simple weeknight meal special enough to serve to Mom on her day! You truly cannot go wrong with this recipe and Champagne. Guaranteed to thrill Mom! Although I did not make a dessert, I highly recommend pairing the Champagne with a lemon ice box pie, strawberry shortcake or a delicious cheese platter to guarantee a home run meal for Mother’s Day!
